  • Bamboo skewers, preferably soaked in water for 20 mins prior to using

  • 2 zucchinis, cut into bite-size pieces
    ‍
  • 6 to 7 tbsp soy sauce
    ‍
  • 1 heaping tbsp date or maple syrup
    ‍
  • 2 tsp vegan oyster sauce
    ‍
  • 2 tsp sriracha
    ‍
  • 1 tsp white miso
    ‍
  • 2 tsp rice vinegar
    ‍
  • Rice, for serving
    ‍
  • Scallion, sesame seeds, and extra sriracha, for topping

  • 90-105 ml soy sauce (6 to 7 tbsp)

  • 1 heaping tbsp date or maple syrup
    ‍
  • 2 tsp vegan oyster sauce

  • 2 tsp sriracha
    ‍
  • 1 tsp white miso
    ‍
  • 2 tsp rice vinegar
    ‍
  • Rice, for serving
    ‍
  • Scallion, sesame seeds, and extra sriracha, for topping
  • Steps

    1. Prepare Skewers: Put the zucchini pieces on the skewers. Each skewer should have around 4-5 pieces.
      ‍
    2. ‍Make Sauce: Mix soy sauce, date syrup, vegan oyster sauce, sriracha, white miso, and rice vinegar in a small bowl.
      ‍
    3. Grill Zucchini: Add the skewers to a grill or cast iron pan over medium-high heat and sear on all sides.
      ‍
    4. ‍Glaze Zucchini: Pour the sauce over the seared zucchini on the grill or pan. Sear on each side for another 1 minute, or until desired crispness.
      ‍
    5. ‍Serve: Serve the zucchini over rice and top with scallion, sesame seeds, and extra sriracha. Enjoy!
