  • 2 tbsp soy sauce
    ‍
  • 2 tbsp vegetable oil
    ‍
  • 4 cups vegetable broth
    ‍
  • 1 cup coconut milk
    ‍
  • 1 tbsp lime juice
    ‍
  • 1 tsp chili oil (optional, for extra heat)
    ‍

Soup Components:

  • 8 oz rice noodles or noodles of choice
    ‍
  • 12 vegan dumplings
    ‍
  • 2 cups bok choy, chopped
    ‍
  • 1 cup shiitake mushrooms, sliced
    ‍
  • 1 red bell pepper, thinly sliced
    ‍
  • 2 green onions, chopped
    ‍
  • Fresh cilantro, for garnish
    ‍
  • Sesame seeds, for garnish

  • 30 g tahini
    ‍
  • 30 ml soy sauce
    ‍
  • 30 ml vegetable oil
    ‍
  • 1 liter vegetable broth
    ‍
  • 250 ml coconut milk
    ‍
  • 15 ml lime juice
    ‍
  • 5 ml chili oil (optional, for extra heat)
    ‍

Soup Components:

  • 250 g rice noodles or noodles of choice
    ‍
  • 12 vegan dumplings
    ‍
  • 300 g bok choy, chopped
    ‍
  • 150 g shiitake mushrooms, sliced
    ‍
  • 1 red bell pepper, thinly sliced
    ‍
  • 2 green onions, chopped
    ‍
  • Fresh cilantro, for garnish
    ‍
  • Sesame seeds, for garnish

Steps

Prepare the Flavor Base:

  • In a heatproof bowl, combine the red curry paste, minced garlic, grated ginger, tahini, and soy sauce.
    ‍
  • Heat the vegetable oil in a small pan until shimmering, then pour it over the mixture. Stir until smooth and aromatic.
    ‍
  • Cook the Noodles and Dumplings:
    ‍
    • Cook the noodles according to package instructions until al dente. Drain and set aside.
      ‍
    • In a separate pot, bring water to a boil and cook the dumplings according to package instructions. Remove and set aside.
      ‍
  • Prepare the Broth:
    ‍
    • In a large pot, combine the prepared flavor base with vegetable broth and coconut milk. Bring to a simmer over medium heat.
      ‍
    • Add the bok choy, shiitake mushrooms, and red bell pepper to the pot. Cook until tender, about 5 minutes.
      ‍
    • Stir in lime juice and chili oil (if using). Adjust seasoning to taste.
      ‍
  • Assemble the Soup:
    ‍
    • Divide the cooked noodles among serving bowls. Add 3 dumplings to each bowl.
      ‍
    • Ladle the hot broth and vegetables over the noodles and dumplings.
      ‍
    • Garnish with chopped green onions, fresh cilantro, and sesame seeds.

  • Serve:
    • Serve the soup hot, adding extra chili oil for spice if desired.
