    • 2 tbsp fresh thyme leaves

    • Black pepper, to taste

    • Olive oil, for roasting

    • 7 oz cream cheese
      ‍
    • 1 whole garlic bulb (top sliced off)
      ‍
    • 14 oz pasta (any type you love β€” fettuccine or penne works great)

    • 7 oz baby spinach
    • 400 g mushrooms, sliced
      ‍
    • 1–2 onions, thinly sliced
      ‍
    • 2 tbsp fresh thyme leaves
      ‍
    • Salt, to taste
      ‍
    • Black pepper, to taste
      ‍
    • Olive oil, for roasting
      ‍
    • 200 g cream cheese
      ‍
    • 1 whole garlic bulb (top sliced off)

    • 400 g pasta
      ‍
    • 200 g baby spinach

    Steps

    1. Preheat the oven to 180Β°C (356Β°F).
      ‍
    2. Prep the veggies: Arrange sliced mushrooms and onions on a large baking tray. Drizzle with olive oil, sprinkle thyme, salt, and pepper, and toss to coat evenly.
      ‍
    3. Add flavor: Dot the tray with spoonfuls of cream cheese. Place the garlic bulb (cut side up) on the tray and drizzle it lightly with olive oil.
      ‍
    4. Roast: Cover with foil and bake for 30–40 minutes until the garlic is soft and the mushrooms and onions are golden and tender.
      ‍
    5. Cook the pasta: While roasting, cook pasta in salted water according to package instructions. Drain and reserve a small cup of pasta water.

    6. Combine: Squeeze the roasted garlic cloves into the tray, mash them gently, then add the cooked pasta and baby spinach. Toss everything together until creamy and well coated β€” use a splash of pasta water if needed.

    7. Serve: Finish with a grind of black pepper and a drizzle of olive oil. Serve warm and enjoy the comfort.
