For the flatbread / base

  • 4 pieces of store-bought flatbread / naan / pita / pizza dough
    ‍(or homemade dough )

Whipped beans

  • 1 can (15 oz) cannellini or great northern beans, drained & rinsed
    ‍
  • 2 tbsp olive oil
    ‍
  • 1 tbsp lemon juice
    ‍
  • 1 small garlic clove
    ‍
  • Salt & pepper
    ‍

Roasted winter vegetables

  • 1 cup butternut squash or delicata, cubed
    ‍
  • 1 cup Brussels sprouts, halved
    ‍
  • 1 medium carrot, sliced
    ‍
  • 1 tbsp olive oil
    ‍
  • Β½ tsp smoked paprika
    ‍
  • Salt & black pepper
    ‍

Toppings / finish

  • Fresh parsley or thyme
    ‍
  • Lemon zest (optional)
    ‍
  • A drizzle of extra-virgin olive oil

  • 30 ml olive oil

  • 15 ml lemon juice
    ‍
  • 1 small garlic clove

  • Salt & pepper
    ‍

Roasted winter vegetables

  • 150 g butternut or delicata squash, cubed
    ‍
  • 150 g Brussels sprouts, halved
    ‍
  • 1 medium carrot, sliced
    ‍
  • 15 ml olive oil
    ‍
  • Β½ tsp smoked paprika
    ‍
  • Salt & black pepper
    ‍

Toppings

  • Fresh parsley or thyme
    ‍
  • Lemon zest (optional)
    ‍
  • Extra virgin olive oil (drizzle)

Steps

  • Preheat oven: 425Β°F / 220Β°C.
    ‍
  • Roast veggies: Toss squash, Brussels sprouts, and carrots with olive oil, smoked paprika, salt & pepper. Roast on a sheet pan for 20–25 min until caramelized.
    ‍
  • Make whipped beans: Blend beans, olive oil, lemon juice, garlic, salt & pepper until smooth and creamy.
    ‍
  • Warm flatbread: Quickly toast flatbread in the oven or on a skillet (5 minutes).
    ‍
  • Assemble: Spread a generous layer of whipped beans over each flatbread. Top with roasted winter vegetables.

  • Finish: Sprinkle with fresh herbs, lemon zest, and a drizzle of olive oil. Serve warm.
