Nordic Lentil & Root Vegetable One-Pot

Ingredients

  • 1 cup dried green or brown lentils

  • 1 tbsp olive oil
    ‍
  • 1 onion, diced
    ‍
  • 2 carrots, chopped
    ‍
  • 1 parsnip, chopped
    ‍
  • 1 small celeriac (or potato), diced
    ‍
  • 2 cloves garlic, minced
    ‍
  • 1 tsp dried thyme
    ‍
  • 1 tsp smoked paprika
    ‍
  • 4 cups vegetable stock
    ‍
  • 1 tbsp tomato paste
    ‍
  • Salt and black pepper, to taste
    ‍
  • Optional: fresh parsley or dill for topping
  • 200 g dried green or brown lentils

  • 1 tbsp olive oil

  • 1 tsp dried thyme

  • 1 tsp smoked paprika

  • 1 litre vegetable stock
    ‍
  • 1 tbsp tomato purΓ©e
    ‍
  • Salt and black pepper, to taste
    ‍
  • Optional: fresh parsley or dill
  • Steps

  • Rinse lentils thoroughly.
    ‍
  • Heat olive oil in a large pot over medium heat.
    ‍
  • SautΓ© onion for 3–4 minutes until soft.
    ‍
  • Add garlic, thyme, and smoked paprika. Stir for 30 seconds.
    ‍
  • Add vegetables, lentils, tomato paste, and stock.
    ‍
  • Bring to a boil, then simmer for 25–30 minutes until lentils are tender.
    ‍
  • Season with salt and pepper.
    ‍
  • Finish with fresh herbs if desired.
