Ingredients

  • 1 cup steel-cut oats (not oatmeal)
    ‍
  • 4 cups vegetable stock
    ‍
  • 2 tablespoons olive oil
    ‍
  • 1 medium onion, finely diced
    ‍
  • 3 cups mixed mushrooms (e.g., cremini + shiitake), sliced
    ‍
  • 3 cloves garlic, minced
    ‍
  • 1 bunch kale, stems removed & chopped
    ‍
  • 1/2 cup dry white wine (optional)
    ‍
  • 2 tablespoons vegan butter or regular butter
    ‍
  • Salt and black pepper to taste
    ‍
  • Optional: grated Parmesan or nutritional yeast
  • 190 g steel-cut oats (not oatmeal)
    ‍
  • 960 ml vegetable stock
    ‍
  • 30 ml olive oil
    ‍
  • 1 medium onion, finely diced
    ‍
  • 300–350 g mixed mushrooms, sliced
    ‍
  • 3 garlic cloves, minced
    ‍
  • 1 bunch kale, stems removed & chopped
    ‍
  • 120 ml dry white wine (optional)
    ‍
  • 30 g vegan or regular butter
    ‍
  • Salt and black pepper to taste
    ‍
  • Optional: grated Parmesan or nutritional yeast
  • Steps

  • Prep the stock: Heat the vegetable stock in a pot and keep at a gentle simmer.
    ‍
  • Cook onions: Warm olive oil in a heavy pan. Add onion and cook until soft, ~5 min.
    ‍
  • Add mushrooms: Add mushrooms and sautΓ© until golden and reduced.
    ‍
  • Garlic & kale: Stir in garlic, cook 1 min, then add kale and cook until wilted. Set veggies aside.
    ‍
  • Toast oats: In the onions pan (or separate), add oats and gently stir for 1–2 min.
    ‍
  • Deglaze (optional): Add wine to pan to lift flavors.
    ‍
  • Simmer risotto: Add hot stock a ladle at a time, stirring until absorbed; continue until oats are creamy & tender (~25–30 min).
    ‍
  • Finish: Stir in vegan/regular butter and season with salt and pepper.
    ‍
  • Serve: Spoon creamy oats into bowls and top with mushrooms & kale. Add Parmesan or nutritional yeast if desired.
