Miso-Roasted Cabbage with Barley, White Beans & Crispy Garlic Crumbs

Caramelised miso-roasted cabbage wedges served over nutty pearl barley and creamy white beans. Finished with golden garlic crumbs and fresh herbs. Deep umami, high in fibre and protein, and built around climate-friendly cabbage.

Ingredients

Miso Cabbage

  • 3 tbsp butter (or plant-based butter), divided
    ‍
  • 1 tbsp white miso paste
    ‍
  • 1 medium green cabbage, cut into 4 wedges
    ‍

Crispy Garlic Crumbs

  • ΒΌ cup panko breadcrumbs
    ‍
  • ΒΌ tsp garlic powder
    ‍
  • 1 tbsp chopped parsley (optional)
    ‍

Barley & Bean Base

  • 1 cup pearl barley
    ‍
  • 1Β½ cups cooked white beans (cannellini or butter beans)
    ‍
  • 1 small leek, thinly sliced
    ‍
  • 1 tbsp rapeseed oil
    ‍
  • 1 tbsp lemon juice
    ‍
  • Zest of Β½ lemon
    ‍
  • Salt & black pepper
    ‍

Optional toppings:

  • Toasted pumpkin or sunflower seeds
    ‍
  • Fresh dill
    ‍
  • Chili flakes

Miso Cabbage

  • 45 g butter (or plant-based butter), divided
    ‍
  • 15 g white miso
    ‍
  • 1 medium cabbage (approx. 800–900 g)
    ‍

Crispy Garlic Crumbs

  • 25 g panko
    ‍
  • ΒΌ tsp garlic powder
    ‍
  • 1 tbsp chopped parsley
    ‍

Barley & Bean Base

  • 1 cup pearl barley (180 g)
    ‍
  • 1Β½ cups cooked white beans (250 g)
    ‍
  • 1 small leek
    ‍
  • 1 tbsp rapeseed oil
    ‍
  • 1 tbsp lemon juice
    ‍
  • Zest of Β½ lemon
    ‍
  • Salt & pepper
    ‍

Optional toppings:

  • Toasted pumpkin or sunflower seeds
    ‍
  • Fresh dill
    ‍
  • Chili flakes

Steps

Roast the Cabbage

  • Preheat oven to 200Β°C / 400Β°F.
    ‍
  • Mix 2 tbsp softened butter with miso until smooth.
    ‍
  • Brush cabbage wedges thoroughly, including the base.
    ‍
  • Place on a baking tray.
    ‍
  • Roast 30–35 minutes until charred outside and tender inside.
    ‍

2. Cook the Barley & Beans

  • Simmer barley in salted water 25–30 minutes until tender.
    ‍
  • Drain well.
    ‍
  • Heat rapeseed oil in a pan.
    ‍
  • SautΓ© sliced leek 3–4 minutes until soft.
    ‍
  • Add barley and white beans.
    ‍
  • Warm through.
    ‍
  • Stir in lemon zest, lemon juice, salt and pepper.
    ‍

3. Make the Garlic Crumbs

  • Melt remaining 1 tbsp butter in a pan.
    ‍
  • Add panko and garlic powder.
    ‍
  • Toast while stirring until golden.
    ‍
  • Remove immediately from heat.
    ‍
  • Stir in parsley.
    ‍

4. Assemble

  • Spoon barley and beans onto plates.
    ‍
  • Place a roasted cabbage wedge on top.
    ‍
  • Sprinkle generously with garlic crumbs.
    ‍
  • Finish with herbs or seeds if using.
    ‍
  • Serve warm.
