Zucchini Rings

  • 2 medium zucchinis
    ‍
  • ΒΌ cup corn starch
    ‍
  • Β½ cup parmesan breadcrumbs
    ‍
  • 1 tsp salt
    ‍
  • 1 tsp garlic powder
    ‍
  • Β½ tsp paprika
    ‍
  • Dash of water
    ‍
  • Spray oil
    ‍

Herbed Dip

  • 1 Tbsp olive oil
    ‍
  • 2 garlic cloves
    ‍
  • 1 tsp salt (to taste)
    ‍
  • 2 Tbsp lemon juice
    ‍
  • 2 Tbsp sesame paste (tahini)
    ‍
  • Β½ cup plain yoghurt
    ‍
  • Handful fresh dill (or herb of choice)

Zucchini Rings

  • 2 medium zucchinis
    ‍
  • 30 g corn starch
    ‍
  • 60 g parmesan breadcrumbs
    ‍
  • 1 tsp salt
    ‍
  • 1 tsp garlic powder
    ‍
  • Β½ tsp paprika
    ‍
  • Splash of water
    ‍
  • Spray oil
    ‍

Herbed Dip

  • 15 ml olive oil
    ‍
  • 2 garlic cloves
    ‍
  • 5 g salt (to taste)
    ‍
  • 30 ml lemon juice
    ‍
  • 30 g sesame paste (tahini)
    ‍
  • 120 g plain yoghurt
    ‍
  • Small bunch fresh dill (or herb of choice)

Steps

  • Slice zucchinis into Β½ inch (1 cm) rounds. Punch out the center to form rings, saving the inner pieces.
    ‍
  • Toss the zucchini rings in corn starch, salt, garlic powder, paprika, and breadcrumbs. Add a splash of water and mix.
    ‍
  • Spray lightly with oil. Bake in oven or air fryer at 400Β°F (200Β°C) for 8–10 minutes until golden and crisp.
    ‍
  • For the dip: sautΓ© zucchini centers with olive oil, garlic, and salt until softened.
    ‍
  • Blend with lemon juice, sesame paste, yoghurt, dill, and more salt to taste.
    ‍
  • Serve the zucchini rings hot with the creamy herbed dip.
