Avocado Crema

  • 1 large avocado
    ‍
  • ΒΌ cup Greek yogurt (or plant-based alternative)

  • 3 Tbsp fresh cilantro
    ‍
  • 3 Tbsp fresh lime juice
    ‍
  • Β½ tsp salt
    ‍
  • 2 Tbsp water
    ‍

Toppings

  • 1 cup shredded red cabbage

  • 1 cup pico de gallo
    ‍
  • Β½ cup cilantro, chopped

  • Optional: hot sauce, jalapeΓ±os, pickled onions

  • 1 g onion powder

  • 1 g crushed red pepper flakes

  • 2 g paprika

  • 6 g sea salt

  • 3 g black pepper

Avocado Crema

  • 1 large avocado
    ‍
  • 60 g Greek yogurt (or plant-based alternative)
    ‍
  • 15 g fresh cilantro
    ‍
  • 45 ml fresh lime juice
    ‍
  • 3 g salt
    ‍
  • 30 ml water
    ‍

Toppings

  • 100 g shredded red cabbage
    ‍
  • 100 g pico de gallo
    ‍
  • 15 g chopped cilantro
    ‍
  • Optional: hot sauce, jalapeΓ±os, pickled onions

Steps

  • Preheat oven to 400Β°F (200Β°C). Line a baking sheet with parchment paper.

  • Wash and chop cauliflower into 1-inch florets.
    ‍
  • Mix all taco seasoning spices in a small bowl.
    ‍
  • Toss cauliflower with oil and seasoning until well coated. Spread evenly on baking sheet.

  • Roast for 25 minutes, flipping halfway, until tender and golden brown.
    ‍
  • While cauliflower roasts, blend avocado, yogurt, cilantro, lime juice, salt, and water until smooth and creamy.

  • Warm tortillas in a dry skillet or over an open flame for a slight char.
    ‍
  • Spread avocado crema on each tortilla, then top with roasted cauliflower, red cabbage, pico de gallo, cilantro, and extra toppings of choice.
