    • 2 cups lamb’s lettuce (field salad)

    • Β½ cup fresh peas (shelled)
      ‍
    • 1 cup strawberries (quartered)
      ‍
    • 3.5 oz feta cheese
      ‍
    • 1 avocado (diced)
      ‍
    • 2 tbsp toasted seeds (sunflower or pumpkin)
      ‍
    Dressing
    • 3 tbsp olive oil
      ‍
    • 1 tbsp honey (or maple syrup for vegan twist)
      ‍
    • Zest + juice of Β½ lemon
      ‍
    • Salt & black pepper
      ‍
    • Freash mint leaves
    • 75 g lamb’s lettuce (field salad)
      ‍
    • 100 g fresh peas (shelled)
      ‍
    • 250 g strawberries
      ‍
    • 100 g feta cheese
      ‍
    • 1 avocado
      ‍
    • 20 g toasted seeds
      ‍

    Dressing

    • 45 ml olive oil
      ‍
    • 15 ml honey (or maple syrup)
      ‍
    • Zest + juice of Β½ lemon
      ‍
    • Salt & black pepper
      ‍
    • Fresh mint leaves

    Steps

  • Whisk together olive oil, honey/maple syrup, lemon zest + juice, salt, and pepper.
    ‍
  • Wash and prep all ingredients: quarter strawberries, dice avocado, and shell peas.
    ‍
  • Spread the greens on a serving plate.
    ‍
  • Add peas, strawberries, and avocado evenly.
    ‍
  • Crumble feta on top and sprinkle with toasted seeds.
    ‍
  • Drizzle with dressing just before serving.
