  • 1 tbsp extra-virgin olive oil

  • 2 cups leeks, chopped

  • Β½ tsp sea salt (plus more to taste)

  • 2 garlic cloves, minced
    ‍
  • 1 cup Arborio rice, rinsed
    ‍
  • Β½ cup dry white wine
    ‍
  • 4 cups vegetable broth (room temperature)
    ‍
  • 1 bunch asparagus, chopped
    ‍
  • 1 tbsp fresh lemon juice
    ‍
  • 2 tbsp fresh chives, chopped
    ‍
  • ΒΌ cup mixed fresh herbs (parsley, basil, tarragon, or dill)
    ‍
  • Lemon zest (for garnish)
    ‍
  • ΒΌ cup grated pecorino (optional)
    ‍
  • Freshly ground black pepper
  • 1 tbsp olive oil

  • 150 g leeks, chopped
    ‍
  • Β½ tsp salt
    ‍
  • 2 garlic cloves
    ‍
  • 200 g Arborio rice
    ‍
  • 120 ml white wine
    ‍
  • 1 liter vegetable broth
    ‍
  • 1 bunch asparagus (~250 g)
    ‍
  • 1 tbsp lemon juice
    ‍
  • 2 tbsp chives
    ‍
  • 15 g fresh herbs
    ‍
  • Lemon zest
    ‍
  • 25 g pecorino (optional)
    ‍
  • Black pepper
  • Steps

  • Heat olive oil in a pan over medium heat. Add leeks, salt, and pepper. Cook until soft (4–5 min).
    ‍
  • Add garlic and cook briefly. Stir in rice and toast for 1 minute.
    ‍
  • Pour in white wine and cook until absorbed.
    ‍
  • Add broth gradually (about ΒΎ cup at a time), stirring continuously and letting it absorb between additions.
    ‍
  • Add asparagus with the final broth addition. Cook until rice is creamy and al dente.
    ‍
  • Stir in lemon juice, chives, and herbs. Adjust seasoning.
    ‍
  • Serve with lemon zest, extra herbs, and optional pecorino.
